Think you could be right about that...  stone is sort of old world looking or rustic and then thicker might be more fitting.  Where as the thin (2" or so) looks ok when it's a low wall and it's stucco, which might tend to look a little more modern. I think also, the size of the cap can make a difference,  if it's a small cap, thinner might look better.

I think the 2" wall caps you did look great.  I'm thinking about going 2 1/2" thick for caps on some low stone walls.
